I came up with this wonderful flavor combination that was so delicious last week at work. The combination is chipotle peppers in adobo, brown sugar, gorgonzola cheese, scallions and cilantro~ it sounds odd at first but it was a huge hit. There is something about the creamy and tanginess of the gorgonzola cheese melding with the spicy, smokey chipotle and then rounding that out with herbs and brown sugar. YUM! I made this mixture, stuffed egg roll wrappers, and deep fried them. That was sent off to a food buyer looking for innovative appetizers. I decided to do a spin on it and made this over the weekend in the form of chicken thighs for dinner. Turned out fabulous if I do say so myself 🙂 This recipe is 10 ingredients or less and can be on the table in 25 minutes! Steam up some jasmine rice to serve with and you will be a hero!
First you combine chipotle peppers in adobo with brown sugar to make a thick sauce. Should look something like this~
Then season your chicken thighs with salt and pepper, and brown in olive oil over medium-high heat. This should take about 10 minutes total, turning once or twice for even browning. Remove chicken thighs to a plate, add 1/4 cup red wine to deglaze the pan and scrape up all the yummy chicken bits and drippings. Add your chipotle and brown sugar sauce to the pan. Cook for 3 minutes it should be bubbly and caramel looking. Add 1/4 cup heavy cream and cook 2 minutes more. Add your chicken thighs back into the pan and cook an additional 3-5 minutes. You will have a thick, delicious sweet and spicy sauce and your chicken thighs will be cooked perfectly.
Plate chicken thighs, spoon sauce over, and sprinkle with gorgonzola, scallions and cilantro.
This was very filling by itself but you can serve with rice or potatoes. Sweet potatoes would be wonderful as they are fantastic with chipotle!
Sweet Chipotle Chicken Thighs
serves 4
Ingredients
1/4 cup (chipotle chilies in adobo and sauce)
3/4 cup dark brown sugar, packed
1/4 cup heavy cream
1 lb skinless, boneless chicken thighs
1/4 cup red wine
2 tbsp olive oil
1/2 cup gorgonzola cheese, crumbled
scallions (1 bunch chopped)
cilantro, handful chopped
Procedure
Season the chicken with salt and pepper. Heat olive oil over medium high heat. Add the chicken and brown on both sides for a total of 10-12 minutes. Meanwhile, combine chipotle chiles and brown sugar to form a sauce. Remove chicken from pan. Add wine to deglaze the pan and scrape up chicken bits. Add chipotle sauce and simmer for 3 minutes. Add heavy cream and cook for an additional 2 minutes. Add chicken back into the pan and coat in sauce. Cook for another 3-5 minutes. Plate chicken and spoon sauce over plated chicken. Garnish with gorgonzola, scallions, and cilantro. Enjoy!
